I don’t think honey can actually go stale, but if it were, that’s what I’m getting. It’s like a muted sweet note with some floral aspects, and I don’t hate it.

Originally a purveyor of gin within England, by 1861 the company had opened a branch in Dublin to expand their operations. To cater to the local tastes, they began blending and selling their own version of Irish whiskey which was sourced from the Jameson distillery and aged in their own proprietary method. From there, the mixture is pumped into a copper pot still where it is distilled three times. Then the newly made whiskey is placed into a combination of American bourbon barrels and previously used sherry casks to mature for a period of at least 12 years. While blended bottlings dominate Irish whiskey exports, the country is also known for its unique single pot still style. To be considered a single pot still whiskey, producers are required to use a combination of malted and unmalted barley, and the spirit must be distilled by one distillery using a copper pot still. Single pot still whiskeys are generally known for being smooth, approachable and rich, showcasing flavor notes of honey, vanilla, and caramel. Today, Redbreast 12 is among the best-selling Irish single pot still whiskeys in the world. Redbreast and Jameson have a closely intertwined history. In both aroma and flavor, ice tends to be very detrimental to fruity and light spirits like this one… and in this case a lot of the lighter flavors are in fact gone. The dried peach and malty scone flavors are holding up pretty well, but the baking spices seem to have run for the exit. I’m still pretty impressed that the fruit is persisting, though, so credit where credit is due. The brand was eventually relaunched in 1991 and remains owned by the Irish Distillers group. Probably the softest Redbreast delivery of all time... a Cadbury's chocolate and fruit and nut finale with grain being surprisingly reticent; lots of toffee and vanilla late on. One of the most docile and pacific Redbreasts I've encountered in the last 30-odd years. Lovely, though. Redbreast is available in a range of expressions, from the classic 12 year old to the rare and highly sought-after 27 year old. Each expression is aged in ex-bourbon and sherry casks and each has its own unique flavor profile, with notes of vanilla, caramel, and spice being standard throughout the range. Redbreast is the perfect whiskey for bird lovers.

After suffering from political and economic turmoil, the whiskey took a hiatus from 1985-1991, when it was given a revamp with a new distiller and the addition of the highest quality sherry and bourbon casks. In recent years, the distiller has released other Redbreast whiskeys, including the Redbreast Cask Strength, Redbreast 21, and other limited edition releases. Redbreast is distilled at the Midleton Distillery using copper pot stills and aged in Oloroso sherry casks. Home to several other single pot still Irish whiskeys, Midleton Distillery also produces Jameson and Tullamore Dew. Compared to either of those whiskeys, Redbreast 12 year is smoother but also more complex. Its sweetness is subtler, though still present. Its finish is smoother and lingers longer. Without prejudice to the section Liability below, the Service may be temporarily unavailable during maintenance, updates, etc. We shall make reasonable efforts to inform you of any unavailability due to maintenance or updates. So what exactly is single pot still whiskey, and who do we have to thank for it? Essentially, it’s whiskey that is made from malted and unmalted barley and no other grain. It is unblended (thus the “single pot” bit.) And it must be made in Ireland to be considered as such. The mash bill is made of a mix of malted and unmalted barley sourced from farms local to the distillery. The unmalted barley lends a creamy mouthfeel and spiciness that stands out on the global whiskey market. Water is sourced directly from the Dungourney River, part of which runs through a system of cooling underground caves. The whiskey is distilled in a copper pot still before being matured in a combination of bourbon seasoned American Oak barrels and Oloroso Sherry seasoned Spanish oak butts. The name “Redbreast” comes from the European Robin (known as Robin Redbreast), a bird that is native to Ireland and is known for its distinctive red-orange plumage. The chairman of Gilbey’s around the early 1900s was an avid amateur ornithologist and decided that the bird would make a perfect symbol for the whiskey. Redbreast is a uniquely Irish whiskey.
