For the first time in the U.S., the talented group of Guinness brewers is giving beer lovers a chance to taste a bit of the brewery’s history with Guinness™ Dublin Porter and Guinness™ West Indies Porter – two beers based on recipes found in Guinness brewing books from more than 200 years ago. The Guinness™ Dublin Porter and West Indies Porter were developed by The Brewers Project, a small group of talented Guinness brewers in Dublin charged with exploring and creating new recipes, reinterpreting old ones, and bringing exciting new beers to life. Hold up, hold up, hold up. What are you talking about? You’re telling me that for two hundred-plus years, Guinness built up a reputation as the biggest stout brewery in the world without ever brewing a single drop of Guinness Draught Stout? Several things combined at just the right time to make Guinness Draught Stout gain a cult-like following.

Two decades later, Guinness launched Guinness Extra Stout, a beer that has been a huge part of the brewery’s history. In all truthfulness, Arthur started off brewing pale ales and amber ales. “That was the style of the day in that part of the world,” says Wagner. And Guinness did build up some local cred on them.

The Origin of Guinness Draught Stout: The Miracle of Nitrogen

Using simple corn sugar is possible, but you can add a little more complexity to your stout by going with an unrefined sugar, such as unrefined cane sugar, Turinado, or Dememera, molasses, date sugar, or Jaggery. Honey, especially darker varieties, may also be fun to experiment with. Keep this addition below 5% percent ideally, though more could be added if you are having trouble hitting your target gravity. From the time that the company started using the harp logo well into the next decade, Guinness would be engaged in the arduous task of building a global brand identity while also consolidating their bottling operation and modernizing brewing methods. For the first of these tasks, they would deploy brand ambassadors known as travelers to build awareness and report to brewery management about developing beer trends. In 1900, one of these travelers identified what he referred to as Colonial Stout in Australia, a sweeter more affordable alternative to Guinness that was locally brewed. Another reported that stout was the most popular beer in South Africa by a wide margin, but that Colonial Stout had the largest share of the market. Colonial Stout in the Caribbean To recreate that two-part pour in one vessel, Michael Ash worked with Guinness to design a special keg. The Ash Can (aptly named after the scientist and mathematician) actually included a two-part keg, with one chamber full of beer and the other full of mixed gas under pressure (twenty-five percent CO2 and seventy-five percent nitrogen). The two combined during the serve to create a nitrogenated pour directly from the tap. One that poured very creamy and delicious.Nigeria is the brewery’s second largest sales market in the entire world, and Guinness has fourteen breweries on the continent of Africa alone. Almost all modern renditions of this style, especially those brewed in the Caribbean, use lager yeast fermented at a warmer temperature. But, this doesn’t mean that ale yeast is off the table. One of the main reasons many Caribbean brewers use lager yeast is because they brew mostly lagers. I would argue a perfectly good tropical stout can be had with ale yeast, though the lager yeast and lagering time can contribute to the beers smoothness. The Tropical stout style is still part of the Export Category in most competitions, so without actually trying the beer it is hard to say which are examples of the Tropical style and which are FES examples. For this reason I am not including any recent award winners. Though I would encourage you to seek out the winners in this category and see if you can figure out which may fall into the Tropical style.

As a reward for faithfully serving the archbishop, the Guinness family received a significant amount of money when he passed away. It’s an ingeniously simple innovation. One that folks in Ireland have recognized time and again. In fact, in the early aughts, an Irish magazine published a survey for readers asking them questions about the previous hundred years, including: What was the most important invention of the twentieth century? It’s a unique beer. “Once you sip through the foam and get the beer, you get roastiness and it’s just a smooth taste, which catches some people off guard,” says Hayden. We wrote that already, but it bears repeating. Why? Because as Wagner mentioned, Guinness is a global brand. A sweet aroma will probably be the first thing noticed and should range from medium to high intensity. Roasted notes with possible coffee or chocolate whispers will be moderate to high. There will be little hop aroma present, if at all. Medium to high fruity aroma along with possible notes of molasses, dried fruit, and/or licorice. Some vinous aromatics are likely with stronger versions exuding stronger yet subtle notes of alcohol. Diacetyl should be low to none. Mouthfeel:

In fact, according to Wagner, Foreign Extra Stout is the number one selling beer in Guinness’ portfolio. Overwhelmingly within the brewery, “Extra Stout is [considered] the quintessential stout,” says Wagner. “If you talk to most people who work at Guinness, the beer we keep in our fridge most often is Extra Stout.” After revolutionizing the two-part pour, Guinness asked: How can we recreate Guinness Draught Stout to drink at home? Debuting in 1989, the widget was Guinness’ ingenious answer.

That same year, Guinness constructed Vat House Number One. “That was a big step forward because it was those vat houses that allowed Guinness to start producing the darker beers that we would become synonymous for later on,” says Wagner. While popular with British expatriates and soldiers on every continent that they were stationed, Foreign Extra Stout was especially enjoyed by the Irish who saw it as part of their identity. As an ethnic group, the Irish were a complicated people within the greater British Empire. They existed as both colonized and colonizers in different parts of the world. In the Caribbean, some were well respected merchants and plantation owners, while others were indentured servants living in slave-like conditions. The majority of the Irish in the Caribbean, as well as much of the free people of color could not afford the expensive ingredients for rum punch, which was the preferred beverage of the plantocracy. They were stout drinkers, enjoying it fresh from the cask poured into tumblers and jars as well as in a beverage known as flip. With a robust lineage and so many rich stories, it’s easy to see why this cherished beer has left its own trademark on history, cultivating a cult-like following over the years.
