You can now pour the decanted gin into small bottles to give as gifts, or a larger bottle for storage, or even in an old-fashioned glass decanter. Crush approximately 300g blueberries lightly - just enough so that the juices can release from the berries. Two cups worth of blueberries (equal to 500ml) - this a "cup" in terms of a standard measuring cup. You can definitely make the blueberry syrup ahead of time. However, I wouldn’t recommend making the whole drink if you’re not going to serve it immediately. To start with, it's worth getting a demijohn, which is a very large glass container with a wide opening and a cork in the top. It means you can fit all the fruit and alcohol in it and you can also keep an eye on when the sugar is disintegrating and see clearly the change in colour of the liquid. Don't discard the leftover blueberries. Place in an airtight container and use in porridge, smoothies, bakes, cakes, etc. Add the gin, bitters and egg white and shake vigorously to foam up the egg white. Be careful as the egg white will expand and your shaker might leak.Flavorful Empress Gin | I used Empress Gin, an all-natural, gluten-free gin infused with 11 botanicals, including butterfly pea blossoms, giving it this gorgeous purple-blue color. Bring to a boil and simmer for 10 minutes until much of the water has evaporated. This will create a blueberry syrup.

Once you’ve pressed your blueberry syrup through a sieve, make sure you don’t discard the leftover blueberries.
