About this deal

Our Wasabi Mustard, Sanbaizu, Vegan Sudachi Kombu Ponzu, Organic White Sesame Oil and new Sansho Spiced Rum were given the coveted award of 3 Gold Stars. However, the grater commonly used in Japan is made from sharkskin and has been used for several centuries by traditional Japanese sushi chefs. When the weather is too hot for a steaming bowl of soupy noodles, zaru udon is the perfect alternative! In Japanese restaurants, the two are often mixed together and used to adjust the spiciness and aroma. The grains on the shark skin line up in a certain direction, and so, it is advisable to grate in a circular motion so that you cover all grain directions.

Dating back in our early history, shark skins had been used to decorate armors and on sword hilts as an antiskid, which later on were used by temple/shrine carpenters as a wood file, which then becomes used on a wasabi grater. To use the grater, you simply rub the wasabi root back and forth across the shark skin surface until it is grated into a fine paste. Our small-group adventures are inspired by our Atlas of the world's most fascinating places, the stories behind them, and the people who bring them to life. The cedar wood block underneath provides a stable base for the grating process and also helps to absorb excess moisture from the wasabi paste, which helps to preserve its flavour and texture! The sharkskin is the perfect tool for grating real wasabi and can bring out the unique zingy flavour and texture of the rhizome paste. Then, they scrape off the precious condiment, layer a minuscule amount between seasoned sushi rice and raw fish, and serve immediately. This Nagajiro - real shark skin and Japanese cedar wood wasabi greater is used by top sushi chefs in Japan.

To do this just follow the above instructions and this should keep you right – enjoy your freshly grated wasabi rhizome and don’t forget the wasabi leaves, flowers and stems are also edible. They are commonly used in high-end sushi restaurants and by home cooks who are passionate about traditional Japanese cuisine.

Then carefully slice off the end tip or the crown and with a knife lightly remove the outer peel to the required amount. Most of the 'wasabi' eaten outside of Japan is actually a mixture of horseradish, mustard and green food colouring. I've never tried grating wasabi root with a Western style grater (it's a bit too expensive to try) but I'd assume you can't get it fine enough so I wouldn't recommend it.
