When the tasters judge that the wine has reached the perfect state of maturity, the Port is carefully drawn off the cask and bottled.

Bomfim is a classic ‘River Quinta’ with several natural advantages: it is south-facing ensuring ideal exposure to the sun; its stony schist soil affords excellent drainage, allowing water to reach the vine’s deep roots; the annual average rainfall is near perfect at 800mm; the altitude ranges from 120 to 340 metres above sea level. The fruit from Bomfim and Senhora da Ribeira form the backbone of their impressive vintage ports and, outside of vintage years, they are also the source of very good value Single Quinta vintage Ports.

The nose is just beginning to evolve into musky, dried plum and raisin aromas with whiffs of tree bark, nutmeg, cumin and cloves. In the good year’s when Dow’s does not ‘declare’ a Vintage, the best Ports of Quinta do Bomfim are carefully selected and bottled as Dow’s Quinta do Bomfim Vintage Port. As with Bomfim, the consistency of the climate plays a key role, although the rainfall is only half of that experienced at Bomfim: 448mm is the 10 year average. These wines are aged in seasoned oak casks for some 18 months and are bottled without any filtration or fining whatsoever. Single Quinta Vintage Ports are made in a similar way to other Vintage Ports in that they're bottled, without filtration, after a couple or so years in barrel and continue to mature in bottle from there.

It is still too soon to tell if 2021 will be declared but the fruit looks good with freshness and aromatics. The Dow’s Vintage Ports come with a fine tannic structure enhanced by bitter chocolate and spicy black pepper flavors. The acidity was near perfect and the tannins are tame but omnipresent; while the finish was spicy, warm and extremely long.
